In 1935, founder Masao Yamane moved from the rice-growing region of Kanazawa Kaga to Tokyo’s Meguro area to open a rice cracker shop. Now located in Adachi Ward, the third generation has continued to pass down their traditional methods and recipes while adapting to the changing times to maintain the authentic flavors. The fire temperature and seasoning are all adjusted by hand using artisanal techniques, as they believe the environment, including seasonal changes and humidity, can affect the outcome. Every day, the craftsmen carefully bake and deliver the rice crackers with meticulous attention to detail.節や
